• 4 Ounces of Salmon (Poached)
  • 2 Cups of Spinach (Raw and Washed)
  • 1/2 Cup of Green Beans (Cut into 1″ Pieces)
  • 1/2 Cup of Tomato (Diced and Laid on a Paper Towel)
  • 1/4 Cup of Scallion (Chopped)
  • 1 Tablespoon of Olive Oil
  • 1 Teaspoon of Lemon Juice
  • 1 Pinch of Salt
  • 1 Teaspoon of Feta Cheese (Crumbled Finely)


  1. If the salmon is not already cooked, bring a pot of water to a simmer and cook the salmon until it is firm (8-10 minutes, 145 degrees at the thickest part).
  2. In a large bowl, toss together the spinach, green beans, tomato, scallion, olive oil, lemon, and salt. Top with salmon and feta and enjoy.
