Pork Ingredients:

  • 1 Fresh Pork Loin Roast (with Fat on Top)
  • 3 Cloves of Garlic (Minced)
  • 1 Tablespoon of Olive Oil
  • 1 Tablespoon of Brown Mustard
  • 1/4 Teaspoon of Salt
  • 1/4 Teaspoon of Ground Black Pepper

Pork Instructions:

  1. Turn the oven to 500 degrees. While it heats up, mix the garlic, mustard, olive oil, salt, and pepper in a small bowl to form a paste.
  2. Pat the pork dry with paper towels, then rub the paste onto the whole pork loin. Rub in well with your hands, making sure to wash them afterward.
  3. Place the pork loin on a sheet tray, fat side up, and place in the oven once preheated.
  4. After 10 minutes, turn down the oven to 400 degrees.
  5. Cook until the temperature inside the thickest part of the pork is 155 degrees. You should use a thermometer for this.
  6. Once cooked, rest at room temperature for at least 15 minutes.
  7. To serve, slice two 1/2″ slices per person.

Potato Ingredients:

  • 2 Sweet Potatoes (Medium)
  • 1 Teaspoon of Cajun Seasoning
  • 2 Tablespoons of Olive Oil

Potato Instructions:

  • Preheat the oven to 400 degrees.
  • Wash and dice the potatoes into 1″ cubes. Toss with the Cajun seasoning and olive oil.
  • Once the oven is hot, spread the cubes onto a sheet tray. Roast until the outsides of the potatoes are browning and soft to the touch (about 30 minutes).
  • Serve immediately.

Zucchini Ingredients:

  • 1 Zucchini
  • 2 Tablespoons of Olive Oil
  • 1 Pinch of Salt

Zucchini Instructions:

  • Preheat the oven to 400 degrees.
  • Slice the zucchini 1/4″ thick, and toss in a bowl with the olive oil until well coated.
  • Line a sheet tray with foil, lay out the zucchini in a single layer and sprinkle a tiny bit of salt over the slices.
  • Roast in the oven for about ten minutes, or until the slices are soft.
  • Serve immediately.
