• 1 Small Chicken Breast (6 oz)
  • 1/3 Cup of Roasted Unsalted Almonds (Chopped)
  • 1 Red Apple (Diced)
  • 1 Teaspoon of Parsley (Chopped)
  • 2 Tablespoons of Mayo
  • 1 Teaspoon of Lime Juice
  • 1 Pinch of Salt
  • 1 Pinch of Ground Black Pepper
  • Unsalted Plain Potato Chips


  1. Bring a pot of water to a simmer. Poach the chicken breast until completely firm and cooked. Cool on paper towels, uncovered in the fridge.
  2. Dice the chicken once cool, combine the chicken with the almonds, apple, parsley, mayo, lemon, salt, and pepper.
  3. Eat with potato chips for a quick lunch.
